Best Recipe of the Week: Buffalo Chicken Lettuce Wraps

May 2014 012 Ingredients:

  • Organic Boneless Skinless Chicken Thighs – 1 pack, chopped into bite size pieces
  • 5 stalks of celery, finely chopped
  • ½ cup sweet yellow onion, finely chopped
  • 3 cloves garlic, finely chopped
  • Organic Feta Cheese
  • Buffalo Wing Sauce
  • 2 Roma Tomatoes
  • Romaine or Bibb Lettuce
  • Coconut Oil
  • Black Pepper and Sea Salt to taste


  1. Heat 3 tbsp of coconut oil and saute onions, garlic, and celery.
  2. Add in diced chicken, black pepper and sea salt, and sauté until completely cooked.
  3. Remove from heat and toss with buffalo wing sauce.
  4. Wash and pat dry romaine leaves. Lay them out on a large serving dish.
  5. Thinly slice roma tomatoes and lay 2-3 slices on each romaine leaf.
  6. Spoon Buffalo Chicken Mixture on top of each leaf.
  7. Sprinkle on feta cheese crumbles. Enjoy!
