Broccoli Marinated Broccoli

Or, you could call this magical broccoli.

One, because everyone magically loves it.

And two, because it tastes cooked but it’s secretly raw! The apple cider vinegar breaks down the broccoli just enough to soften it a little but still maintain fresh, crunchy awesomeness.

Ingredients:

  • 2 large heads of organic broccoli – washed and chopped into bite size pieces
  • 2 tsp organic garlic powder
  • 2 tsp organic onion powder
  • Sea salt & Pepper – to taste
  • ¼ cup coconut milk
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • Juice of 2 lemons
  • 1-2 tsp of raw honey

Mix all ingredients except for broccoli. Place broccoli in a large sealable pyrex dish. Pour mixture over broccoli. Cover with lid and shake for 20 seconds. Every 20-30 minutes, give it another good shake so that the broccoli gets evenly covered. Let marinate for 3 hours or more before serving.

You can use whatever spices you like to mix this up. Sometimes I’ll throw in dill. Other times I’ll mix in dijon mustard. Have fun with it. It’s all good.
