Best Recipe of the Week: Flavor Bomb Bean Tacos

Tacos We do taco night often. Everyone loves tacos. They're not hard to make. Always an insta-hit in our house. We had a few extra ingredients on hand and these crazy delicious tacos came as a result. Any homemade taco recipe is better than the garbage pack-o-taco kits you find in the grocery store. But these were extra good.

Here’s how to recreate this healthy recipe in your kitchen:

Red Cabbage

  • 2 cups shredded red cabbage
  • Juice of 1 lime
  • ¼ cup of coconut milk
  • ½ tsp of cumin
  • ½ tsp of coriander
  • Salt to taste

Shred cabbage and set aside. Combine remaining ingredients and pour over cabbage. Mix well.

Salsa

  • 4 Roma Tomatoes – chopped
  • Handful of cilantro – chopped finely
  • ¼ yellow onion – chopped
  • 2 garlic cloves minced
  • Juice of 2 limes
  • Salt to taste

Combine all ingredients.

Black Bean Mix

  • 4 cups of black beans
  • Jicama – chopped
  • Juice of 2 limes
  • 2 tsp of cumin
  • 2 tsp of coriander
  • 2 tsp of Mexican oreganco
  • Salt to taste

Combine all ingredients. We heated this slightly before serving.

Avocado - sliced

Cheese of your choice (shredded Daiya Cheese is the best non-dairy option)

Tortillas

Warm tortillas in the oven and serve ingredients family style. Everyone can pick and choose the toppings they like. Huge hit.
