Balsamic Kale-Mushrooms

  • Baby Bella Mushrooms - 2 small packages, washed and quartered
  • Onion - 1/4 cup, finely chopped
  • Garlic - 2 cloves, chopped finely
  • Kale - 1/2 head, washed and chopped bitesize
  • Balsamic Vinegar - 3 tbsp
  • Olive Oil - 3 tbsp
  • Garlic & Onion Powder - 2 tsp each
  • Sea Salt & Pepper - To Taste
  1. Heat olive oil on stove. Saute onions.
  2. Add Garlic Cloves. Saute for another minute.
  3. Add mushrooms, drizzle on balsamic vinegar. Cover and simmer for 2-3 minutes.
  4. Add Kale. Sprinkle on garlic powder, onion powder, sea salt, and pepper.
  5. Cover and simmer for another few minutes until kale is tender.
