When was the last time your child ate pumpkin? Never? Yeah. Mine either. Until I started making these shakes. Pumpkin-anything is generally on our Fall menu but my little guy requested this shake today. (Because pumpkin in August makes perfect sense to a four-year old.)
It’s so healthy, I have no problem making it.
One cup of pumpkin has 7 grams of fiber. 19 mg of Omega 3's...no fish oil required? I'm in. And check out all the vitamins and minerals!
Here’s what you need:
- 1/2 can pumpkin
- 2 cups So Delicious Coconut Milk
- 2 tbsp pumpkin pie spice
- 3 tsp cinnamon
- 2 tsp brown sugar
- 1 tsp raw local honey
- dash of vanilla extract
- 1 banana
- 1 cup of ice
- 2 scoops Vanilla Fit Food
Here's what you do:
Blend & Enjoy. Don't forget to call it pumpkin "pie" so your kid thinks you're super amazing and serving them desert. As always, you can add more ice for a thicker shake or more water for a thinner shake. We like ours thick and milk-shake-y around here.
